Honey-processed and light roasted, this lot opens with bright citrus, settles into caramel and almond, and finishes with a clean floral lift. It's a cup shaped by the terroir of the award-winning farms of Balutakay.
A honey-processed Catimor from the volcanic slopes of Mount Apo in Davao del Sur, southern Mindanao. The coffee grows in the cool, misty highlands of Bansalan at 1,650 masl, tended by Lumad farming families who have cultivated Arabica in the shadow of the country's highest peak for generations. The perpetually clouded climate and dark volcanic soil slow the cherry ripening process, building density and sweetness before harvest.
