Yellow and Red Bourbon grown side by side at 1,200 masl on the slopes of Mount Kitanglad, honey-processed by Corazon Llaurderes of IMDALSA Coffee — winner of a Special Citation for Experimental Coffee Processing at the 2025 Philippine Coffee Quality Competition. Nutty cocoa, brown sugar, roasted almond.
Corazon Llaurderes farms on the slopes of Mount Kitanglad — the 2,899-metre volcano that anchors the highlands of Bukidnon, home of the Talaandig people. Her plot is a mixed planting of two Bourbons: the yellow-cherry mutation prized for its delicate, refined sweetness, and classic Red Bourbon for depth and body, picked and processed together as one lot.
IMDALSA dries it as a honey — cherries pulped without water and sun-dried with the sticky mucilage layer still on — a slow, carefully managed fermentation-and-drying that earned the farm a Special Citation for Experimental Coffee Processing at the 2025 Philippine Coffee Quality Competition, national recognition for a producer pushing processing boundaries.
In the cup: nutty cocoa and roasted almond over brown sugar, rounded off with dried fruit with a cup score of 81.17
